Lollo Rossa

Lollo Rossa structures a petit and compact rosette of fan-molded blood violet leaves with a non-hearting light green base. The leaves have a fresh, semi-juicy, crisp texture.
Its bitterness can be balanced by rich and warming fixings like cream, bacon, nutty oils, matured pecorino, pumpkin and winter squash. Its flavors can be lifted by brilliant notes of citrus and sweet tart organic products like apples and berries. Other free fixings incorporate fennel, basil, truffles, seared sage, garlic, dried spices and bread garnishes.
