Red Russian kale grows in an enormous free rosette shape that goes from 30-50 cm tall. This classification is effectively perceived by its lavishly hued burgundy stems and purple colored leaves. They are level and toothed like an oak leaf with a general dull green tone and dark red veins. Red Russian kale offers a gentle nutty flavor that is marginally sweet and earthy with a sturdy texture. Sautéed or braise the developed leaves, or use the new sprouts raw in plates of mixed greens.
No measure of cooking will mellow the stems so it is best to use just the leaves.
